Hopenhagen Farm was born from the idea of utilizing our farmland after we both retire. With a collection of useful knowledge, and a lot of physical labor, we successfully planted Cascade and Newport hops in the Spring of 2014. The idea of Hopenhagen Farm became a reality.
Along with hops we decided to start growing lavender in 2016. To date we have 1800 Phenomenal, Munstead, Big Blue, Super Blue, Edelweiss, and Melissa Lilac lavender species.
In May, 2017, we opened a specialty store at our farm which specializes in hop and lavender products including a forever evolving product line of soaps, candles, personal products, a children’s line, pet line and culinary delights. Our farm features our Lavender Wine and Lavender Soft Ice Cream.
In 2018, we completed a 20-C kitchen and opened The Tea Room. We offer a beautiful room for events and traditional afternoon tea parties. The 20-C kitchen enables us to dry our lavender as culinary grade.
In October 2018 Hopenhagen became a participant of New York Grown and Certified. We are also part of the Lewis County Cuisine Trail and Adirondack Harvest.
In July of 2021, we started steam distilling some of our lavender for essential oils.
Our products are currently offered in some Taste of New York stores as well as other venues.
Hopenhagen Farm grows and harvests it’s hops and lavender with great detail and care to ensure our quality transforms to our finished products. We welcome all visitors to see our hops and lavender and learn how we grow, harvest and dry our hops and lavender.
